Asia is the largest salt consuming region, accounting for 30 per cent of world consumption and Japan is the leading importer. Solar salt is produced by the action of sun and wind on seawater or natural brine in lakes. The water evaporates in successive ponds until the brine is fully concentrated and salt crystallizes.
